Food processing floors fail audits for boring, predictable reasons: a seam that harbors bacteria, a cove that was caulked instead of coved, a drain that no longer sits at the low point of the room.
Getting a food plant floor right is mostly about detailing, and detailing is where the cheapest bid always gets quietly thinner.
Seamless means seamless
Quarry tile was the old standard, and grout lines are its fatal flaw. Every joint is porous, every joint holds product residue, and no amount of scrubbing fully resolves it.
A monolithic resinous system has no joints to harbor anything. That is the single biggest sanitation upgrade most plants can make.
Cove base is not optional
The wall-to-floor transition is where water and residue collect. An integral cove base — the floor system turned up the wall four to six inches as one continuous surface — removes the crevice entirely.
Caulked vinyl base in a washdown environment is a temporary solution that will be a finding on your next audit.

A production floor that sees 180-degree washdown water followed by ambient air, or a freezer threshold cycling constantly, is under thermal stress no rigid coating survives long.
Urethane mortar systems are built for exactly this. They expand and contract at a rate close to concrete, which is why they dominate in wet food production.
Chemistry, drainage and texture
Specify against what actually hits the floor — lactic and acetic acids, animal fats, blood, sugars, caustic sanitizers — not against a generic chemical resistance chart.
Then confirm the floor still moves water to the drains. Re-establishing falls during the install is routine work and prevents standing water, which is its own audit finding.
